Potato chips, flakes and french fries
Chips, french fries, potato flakes, granules, starch
Potato chips, flakes and french fries line by GEM Foodtech, Kolkata, India — capacity 500 kg to 10 tonnes of potato per hour, final yield 25% of raw intake, delivered as a turnkey plant with installation and commissioning worldwide.
The commercial reality
Potato yield is decided before the line starts: specific gravity, reducing sugar and storage temperature. Give a good line a bad potato and you get dark chips and high oil pickup. The equipment can only protect a yield that the raw material already contains.

Process chart
Every stage with the equipment that performs it, the operating parameter and the control point that decides quality.
| # | Stage | Equipment | Parameter | Control point |
|---|---|---|---|---|
| 01 | Destoning and washing | Fruit and vegetable washer | Destoner, drum washer | Stone and soil removed |
| 02 | Peeling | Peeler, abrasive or steam | Abrasive or steam peeler | Peel loss held to 8–12% |
| 03 | Inspection | Inspection and sorting conveyor | Trimming belt | Eyes, green and rot removed |
| 04 | Slicing or strip cutting | Slicer, dicer and shredder | 1.2–1.6 mm chips, 8–12 mm fries | Cut thickness controls oil uptake |
| 05 | Washing and blanching | Blancher and cooler | Starch wash then 70–85 °C blanch | Surface starch and reducing sugar controlled |
| 06 | Dewatering | Conveying and material handling | Vibratory de-waterer and air knife | Surface water off before the fryer |
| 07 | Frying | Continuous fryer and de-oiler | Continuous fryer, 165–180 °C profiled | Colour and moisture below 2% |
| 08 | De-oiling | Continuous fryer and de-oiler | Centrifugal or vibratory de-oiler | Oil content to specification |
| 09 | Seasoning and packing | Filling, sealing and packing line | Rotary drum seasoner, N₂ flush packing | Weight, seal and shelf life |
Mass balance
Basis of 1,000 kg of raw material. Change the tonnage below and the whole table rescales.
| Stage | Output, kg/h | Yield | Loss, kg/h | Where the loss goes |
|---|---|---|---|---|
| Potato received | 1,000 | 100% | 0 | — |
| After washing and peeling | 890 | 89% | 110 | Peel to feed or starch recovery |
| After trimming and slicing | 850 | 85% | 40 | Trim to starch recovery |
| Fried chips at 2% moisture | 260 | 26% | 590 | Water evaporated, oil absorbed |
| Packed product | 250 | 25% | 10 | Fines and broken to reprocessing |
By-products: Peel and trim to starch recovery or cattle feed; fryer fines screened and recovered.
Equipment schedule
Core machines for this line. Conveying, tanks, CIP and utilities are added to suit the layout.
| Equipment | Capacity range | Function |
|---|---|---|
| Fruit and vegetable washer | Preparation | Removes field soil, latex and surface load with recirculated, filtered water. |
| Peeler, abrasive or steam | Preparation | Abrasive carborundum drum or batch steam peeler with flash vessel. |
| Inspection and sorting conveyor | Preparation | Manual or optical removal of unripe, damaged and foreign material. |
| Slicer, dicer and shredder | Preparation | Uniform slices, dices, strips or kibble — cut geometry sets drying time. |
| Blancher and cooler | Thermal | Inactivates enzymes, sets colour, then cools to arrest cooking. |
| Conveying and material handling | Handling | Moves product between stations without degrading it. |
| Continuous fryer and de-oiler | Thermal | Oil-temperature-profiled frying with centrifugal or vibratory de-oiling. |
| Filling, sealing and packing line | Packing | Weighing, filling, sealing, metal detection and case packing. |
Questions we get on this line
What raw potato do I need?
Specific gravity above 1.080 and reducing sugars below 0.25%. Storage at 8–10 °C, not 4 °C, or the sugars rise and the chips darken.
Chips or flakes?
Flakes suit an irregular raw supply because appearance matters less. Chips need consistent tubers but sell at a higher margin.
What capacity range does the potato line cover?
Standard GEM Foodtech builds cover 500 kg to 10 tonnes of potato per hour. Larger duties are engineered to order — the right size is set by the raw material supply through the season, not the nameplate figure.
Is this supplied as a complete turnkey plant?
Yes. The Potato chips, flakes and french fries line is delivered end to end — feasibility, pilot trial on your own material, engineering, manufacture in Kolkata, installation, commissioning and operator training — or as individual machines to fit an existing plant.
